Are the conversion factors exact or approximate?

Exact. Length and mass use the factors from the 1959 international treaty that defines the inch and the pound relative to the metric system — the same ones used in technical and scientific standards.

Why does temperature work differently from the other categories?

Length, mass and volume are linear conversions (multiply by a fixed factor). Temperature has an offset on the scale in addition to the factor — that's why Celsius, Fahrenheit and Kelvin use their own formulas instead of a single factor.

Which volume unit do you use for 'gallon'?

The US gallon (3.785 liters), the most common reference for recipes, fuel and products imported from the US. The British imperial gallon is a different measurement.
